Some Winter Sunshine

~ Lemon Curd Tarts ~


Zest of apprx. 3 Large Lemons
4 teaspoons


2/3 cup Lemon Juice


5 Eggs


And 1 cup of Sugar
All into a blender.


Melt a stick of butter
(I defrost-micro it right in a creamer)

Cool

Blend lemon, egg & sugar on low until blended

Pour butter in a slow steady stream
While still mixing on low


Pour your mix into a heavy pan
GET A BOOK or SOMETHING TO READ
And start to cook over low to medium heat
STIRRING CONSTANTLY with whisk / fork
Until mix thickens a little like pudding.


Trust me on having something nearby to read
You will be stirring a long time


Make a pie crust dough


and cut to fit mini muffin pans


Bake the crusts by themselves on 350F until browned


Fill a baggie with your curd
Snipping the tip off
And fill the cooled pastry cups


Top with a Berry or a flower
Or just Plain !

Have it with Tea !
